Alex Dal Santo
Prior to Birdsong, Alex Dal Santo held positions in Chicago at The Soho House and GT Prime Steak House. In 2018, Alex became a sommelier at Alinea, where she worked with Chef Daniel. She moved to San Francisco in 2021 to join the Birdsong team as our Service Manager.
Alex grew up making sausage and charcuterie with her father, who learned from his father - their family owns an Italian deli and catering business in the Chicagoland area. She is carrying on the family heritage through her work at Birdsong. “I bring that type of hospitality - big Italian family hospitality - with me into every service. My choice to get into fine dining showcases my love for food and beverage, but in a slightly more elevated way than slinging sausage.”
