Lindsay Pelzel began her restaurant career in New York City. While working her way through the ranks, she pursued an innate inclination towards more service-centric roles and eventually moved to San Francisco to become a captain at Lazy Bear. Lindsay quickly became a manager and has since also led the front-of-house teams at Monsieur Benjamin and Petit Crenn.
Growing up with maternal grandparents from France and Croatia, big meals were the center of her upbringing, with her grandfather grilling lamb on special occasions and her grandmother setting elaborate tables at every opportunity. The ‘too-much gene’ - providing abundantly for each person - was passed on to Lindsay through her mother and aunt and has influenced her generous style of hospitality as Birdsong’s Service Manager.
